According to the records of the time, the Giusti family produced delicacies for the best tables of Emilia already since ‘500. The official foundation of the house dates back to 1605.
The biggest collection of ancient casks.
A “wood” treasure. Each cask is imbued of its aroma and its own history. Old casks dating back to 1600, 1700 and 1800 creating to the oldest collection in the world. A “magical vault” where Balsamic Vinegar ages and become precious.

 

The recipe for balsamic, a secret passed down orally from father to son over the centuries. An ancient knowledge, intangible heritage of Modena, made of gestures and unwritten traditions that Giusti family protects with care and dedication

 

In 1600 was Giuseppe Giusti. Today are Claudio and Francesca. The 17th generation of the family, together with Luciano, guides the company and holds the collection, combining the experience inherited along four centuries with a modern business management.

Dedicated to the ancestor who created the recipe, born from sweet, dried grapes. Aromas and flavours of plum jam and red fruits intertwine with a hint of honey and vanilla, for a great density and sweetness which makes it so loved.

 

Ageing
In barrels with the addition of aged balsamic vinegar extracted from a series of centuries old casks.
Serving suggestions
Fresh pasta such as ravioli, selected cuts of beef, cheese, fresh fruit and dessert.
