Goliardo is a soft, mature cheese, made with whole pasteurised cow’s milk and Barbera d’Asti DOCG wine.
The flavour is aromatic with hints of wine whose acidity contrasts with the fat of the cheese.
Soft, with fine hole regularly distributed. Dark red. Aromatic flavour with a perfume of the vine whose acidity contrasts with the softness of the cheese.
The cheese is matured in underground cellars, on white pine shelves, for 30 to 60 days.
It is used in the preparation of typical dishes from Piedmont region and as a cheese for the table.
Cow Milk, Barbera d’Asti DOCG wine(2%), salt, rennet, lactobacillus. Sulphites (derivative of vine) within the level of the law (10 mg/kg).
In the fridge from +0° to +4° or it can be stored in cool and humid place.
Room temperature. Inedible rind. Eat after removing rind
