Semi- soft paste cheese, long matured cheese produced with cow’s milk from at least two consecutive milking.
Soft, white colour with pale yellow shades. The holes are fine and regularly distributed. The taste is sweet, pleasant and delicate at 60 days and becomes intensely flavoured while maturing.
Rounds are aged in undergrounds cells on white pine shelves for a period which can vary from 45 to 120 days
Cow Milk, salt, rennet, lactobacillus
In the fridge from +0° to +4° or it can be stored in cool and humid place.
Room temperature. Inedible rind. Eat after removing rind
