The rind has a scorched earth colour, while the cheese itself is white and has a silky smooth texture that melts in the mouth slowly leaving a very pleasant aftertaste of fresh milk.

The Pecorino Gran Riserva del Passatore is made according to the oldest and most secret cheese production techniques, passed on from generation to generation.
It’s dry-salted and rubbed with raw flaxseed oil every day in order to maintain soft rind and to allow a uniform maturation.
Pasteurized sheep milk, salt, rennet and cheese cultures. Rind treated with grape seed oil.
Product subject to natural weight loss.
